Watermelon & Pistachio-Crusted Cream Cheese Balls with Balsamic Drizzle

Prepare the Balsamic Reduction

In a small saucepan, heat balsamic vinegar (and honey, if using) over medium-low heat.

Simmer for 8–10 minutes, stirring occasionally, until reduced by half and syrup-like.

Remove from heat and let cool (it thickens further as it cools).

Make the Cream Cheese Balls

Mix softened cream cheese, honey, vanilla, and lemon zest until smooth.

Chill mixture for 15 minutes to firm up.

Scoop about 1 tbsp per ball, roll into small balls, then coat with ground pistachios.

Chill another 15 minutes to set.

Assemble the Dish

Arrange diced watermelon cubes on serving plates or a platter.

Place one pistachio-crusted cream cheese ball over each portion.

Drizzle generously with balsamic reduction.

Garnish with fresh mint and extra pistachios if desired.
