Vegetarian Dumpling Soup

In a bowl, combine flour, water, and salt to make a smooth dough.

Roll out dough and cut into small circles.

Mix chopped vegetables, garlic, and soy sauce in a separate bowl.

Place a teaspoon of vegetable filling in the center of each dough circle. Fold and pinch to seal into dumplings.

Prepare the Soup:

In a large pot, heat sesame oil over medium heat. Sauté onion and garlic until fragrant.

Add carrots, mushrooms, and vegetable broth. Bring to a boil.

Cook Dumplings in Soup:

Gently add dumplings to the simmering broth.

Reduce heat to medium-low and simmer for 8–10 minutes, until dumplings are cooked through.

Add Greens & Seasoning:

Stir in bok choy or spinach and soy sauce. Simmer 2–3 minutes until greens are wilted.

Season with salt and pepper to taste.

Serve:

Ladle soup and dumplings into bowls. Garnish with green onions, cilantro, or sesame seeds if desired. Serve hot.
