In a bowl, combine red lentils, mashed sweet potato, oat flour or breadcrumbs, sesame seeds, cumin, smoked paprika, salt, and pepper.
Mix well and form into small patties. If the mixture is too soft, chill for 15 minutes before cooking.
Pan Fry the Burgers:
Heat a skillet over medium heat and add a little olive oil.
Cook patties for 3–4 minutes per side, until golden brown and crisp.
Prepare the Sauce:
Blend avocado, cilantro, garlic, lime juice, jalapeño (or chili flakes), and water until smooth and creamy.
Adjust seasoning with salt to taste.
Assemble:
Place warm patties on a plate or bun.
Top generously with avocado cilantro sauce and garnish with extra fresh cilantro if desired.
