Tortilla Cottage Cheese Egg Bake

Preheat oven: Set oven to 375°F (190°C). Grease a small baking dish.

Layer tortilla: Place the tortilla at the bottom of the dish, pressing it gently to cover the base.

Mix filling: In a bowl, whisk together eggs, cottage cheese, milk, salt, and pepper. Stir in spinach, meat (if using), and any optional vegetables.

Assemble: Pour the mixture over the tortilla. Sprinkle shredded cheese evenly on top.

Bake: Bake for 25–30 minutes, or until eggs are fully set and the top is lightly golden.
