Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper or a wire rack.
Sprinkle a very light pinch of baking soda evenly over the bacon slices. (This is enough to help the bacon crisp and hold shape.)
Lay the bacon slices flat on the baking sheet, making sure they don’t overlap.
Bake for 15–20 minutes, depending on thickness, until golden and crispy.
Remove from oven and place on paper towels to drain excess fat.

Heat a large skillet over medium heat.
Lightly sprinkle baking soda over the bacon slices.
Cook bacon, turning occasionally, until evenly crisp.
Drain on paper towels and serve.
