Place beets in a pot and cover with water.
Bring to a boil, then simmer for 30–40 minutes until tender.
Drain, let cool slightly, then peel and slice into rounds or wedges.
Prepare the Pickling Liquid
In a saucepan, combine vinegar, water, sugar, salt, and optional spices.
Bring to a simmer and stir until sugar dissolves.
Pickle the Beets
Place sliced beets into a clean jar or container.
Pour hot pickling liquid over the beets, making sure they are fully submerged.
Let cool to room temperature, then cover and refrigerate.
Marinate
For best flavor, allow the beets to marinate at least 24 hours before serving.
