Stuffed Zucchini Rolls with Yogurt Sauce – Light, Healthy & Delicious

Thinly slice the zucchinis lengthwise using a mandoline or vegetable peeler.

Lightly salt and let sit for 5–10 minutes to soften, or quickly grill them to make rolling easier.

2. Cook the filling:

In a skillet, sauté onion and garlic in a small amount of olive oil until fragrant.

Add the ground meat, tomato paste, paprika, cumin, salt, and pepper.

Cook until the meat is browned and fully cooked. Allow to cool slightly.

3. Roll the zucchini:

Place a spoonful of the meat filling on each zucchini slice and roll tightly.

Arrange the rolls neatly in a greased baking dish.

4. Make the yogurt sauce:

In a bowl, whisk together yogurt, egg, flour, and a pinch of salt until smooth.

Pour the sauce evenly over the zucchini rolls.

5. Bake:

Preheat oven to 180°C (350°F).

Bake for 25–30 minutes, until the top is golden and bubbly.
