Preheat oven to 400°F (200°C).
Scrub potatoes and prick each several times with a fork.
Rub with olive oil, sprinkle with salt, and bake directly on the oven rack for 45–60 minutes, until tender.
2. Prepare the Filling
While potatoes bake, heat a skillet over medium heat and sauté onions and garlic until translucent.
Add the cooked smoky sausage and cook until slightly browned.
Remove from heat and let cool slightly.
3. Hollow and Fill the Potatoes
Cut baked potatoes in half lengthwise. Carefully scoop out most of the flesh into a bowl, leaving a thin shell intact.
Mash the scooped potato with sour cream or cream cheese (if using), salt, and pepper.
Stir in the sausage mixture and half of the shredded cheese.
4. Bake Again
Spoon the filling back into the potato shells.
Top with remaining shredded cheese.
Bake at 375°F (190°C) for 10–15 minutes, until cheese is melted and bubbly.
