Prepare the Crust – Mix graham cracker crumbs, melted butter, and sugar. Press evenly into the bottom of a springform pan. Bake at 350°F (175°C) for 8–10 minutes. Let cool.
Make the Cheesecake Filling – Beat cream cheese until smooth. Add sugar and vanilla, then eggs one at a time, mixing until creamy. Pour over cooled crust.
Bake the Cheesecake – Bake at 325°F (160°C) for 35–40 minutes until set but slightly jiggly in the center. Allow to cool completely, then refrigerate for at least 2 hours.
Add Toppings – Spread strawberry jam on top, then arrange fresh strawberries. Sprinkle crushed graham crackers if desired.
