Season the steak slices with salt, pepper, and paprika.
Heat 1 tablespoon olive oil in a skillet over medium-high heat.
Sear the steak for 2–3 minutes per side until cooked to your liking. Remove and set aside.
2. Sauté the Veggies:
In the same skillet, add a little more oil if needed.
Sauté onions (and bell peppers, if using) until soft and slightly caramelized.
3. Assemble the Quesadillas:
Place a tortilla on a clean surface.
Sprinkle a layer of cheese, add a portion of steak and sautéed veggies, then top with more cheese.
Cover with a second tortilla.
4. Cook the Quesadillas:
Heat a skillet or griddle over medium heat.
Cook each quesadilla 2–3 minutes per side, pressing gently, until golden brown and the cheese is melted.
Cut into wedges.
