Prepare Chicken: Season chicken breasts with salt and pepper. Heat olive oil or butter in a large skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Remove and set aside.
Cook Bacon: In the same skillet, cook chopped bacon until crisp. Remove bacon and drain on paper towels, leaving bacon fat in the skillet.
Sauté Mushrooms and Garlic: Add mushrooms to the skillet and cook until browned, about 5 minutes. Stir in minced garlic and cook 30 seconds until fragrant.
Make Creamed Spinach: Add spinach to the skillet and cook until wilted. Stir in heavy cream, Parmesan cheese, cooked bacon, and Italian seasoning. Simmer 2–3 minutes until creamy and combined.
Combine & Serve: Return chicken to the skillet, spooning the creamed spinach, bacon, and mushroom mixture over the top. Serve warm with your favorite sides.
