Cook the noodles: Cook lo mein noodles according to package directions, drain, and set aside.
Prepare the sauce: In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar, and cornstarch slurry. Set aside.
Cook the chicken: Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat. Add the chicken slices and cook for 5–6 minutes until golden and cooked through. Remove and set aside.
Stir-fry vegetables: Add remaining oil to the skillet. Toss in garlic, carrots, bell pepper, and broccoli. Stir-fry for 3–4 minutes until tender-crisp.
Combine everything: Return chicken to the pan. Add noodles, green onions, sesame oil, and prepared sauce. Toss everything together until well coated and heated through.
Serve: Plate immediately and garnish with extra green onions or sesame seeds if desired.
