Savory Baked Potatoes with Meat and Vegetable Filling

Preheat the oven to 400°F (200°C).

Scrub the potatoes clean, prick them several times with a fork, rub with olive oil, and sprinkle with salt.

Place directly on the oven rack and bake for 45–60 minutes until tender.

Prepare the Filling:

In a skillet over medium heat, cook the ground meat until browned. Drain excess fat.

Add onions, garlic, carrots, and bell peppers. Sauté for 5–7 minutes until vegetables are tender.

Stir in paprika, oregano, salt, and pepper. Cook for another 2 minutes. Remove from heat.

Assemble the Baked Potatoes:

Once the potatoes are baked, let them cool slightly, then cut a slit down the center and scoop out a portion of the flesh into a bowl.

Mix the potato flesh with the meat and vegetable filling.

Spoon the mixture back into the potato shells. Top with shredded cheese.

Bake Again (Optional):

Return the stuffed potatoes to the oven for 5–10 minutes, until the cheese melts and is golden.

Garnish with fresh parsley.
