Preheat oven to 180°C (350°F). Line a muffin tin with paper liners.
Beat eggs with sugar until fluffy and pale.
Add milk, oil, and vanilla; mix until well combined.
Sift in flour, baking powder, and salt. Stir gently until just combined.
Pour batter into muffin molds, filling about ¾ full.
Bake for 20–25 minutes, or until golden and cracked on top.
Allow muffins to cool slightly before serving.
