Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prepare puff pastry – Roll out the pastry sheet slightly on a floured surface. Cut into rectangles or squares, depending on the size you want.
Assemble – Place a slice of ham and cheese on one half of the pastry. (Optional: spread a thin layer of Dijon mustard first.) Fold the pastry over and seal edges with a fork.
Egg wash – Beat the egg and brush over the top of each pastry for a golden finish.
Bake – Place on prepared sheet and bake for 15–20 minutes, until puffed and golden brown.
Serve hot – Enjoy them fresh from the oven while the cheese is still gooey!
