Protein-Packed Vegan Lentil Patties – Better Than Meat

Rinse lentils under cold water.

In a saucepan, combine lentils and water. Bring to a boil, then simmer for 15–20 minutes until soft. Drain excess water if necessary.

Prepare the Patty Mixture

In a skillet, sauté chopped shallot, garlic, and grated carrot in a little olive oil until softened.

In a large bowl, combine cooked lentils, sautéed vegetables, breadcrumbs, flaxseed mixture, cumin, smoked paprika, salt, and pepper.

Mash slightly and mix until the mixture holds together.

Form the Patties

Using your hands, shape the mixture into small, even patties.

Cook the Patties

Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat.

Fry patties for 3–4 minutes per side until golden and crisp.

Alternatively, bake in a preheated oven at 375°F (190°C) for 20–25 minutes, flipping halfway.

Serve

Enjoy warm with a side salad, in a burger bun, or as a protein-packed snack.
