Prep the Roast: Remove the prime rib from the refrigerator about 1 hour before cooking to bring it to room temperature. Preheat oven to 450°F (230°C).
Make the Rub: In a small bowl, mix olive oil, black pepper, Parmesan, minced garlic, and salt. Add finely chopped fresh herbs if desired.
Coat the Roast: Rub the mixture evenly over the entire surface of the prime rib.
Roast: Place the roast on a rack in a roasting pan, bone-side down. Roast at 450°F (230°C) for 15 minutes to develop a crust.
Reduce Heat: Lower oven temperature to 325°F (165°C) and continue roasting for 1 ½–2 hours, or until internal temperature reaches your desired doneness:
Rare: 120–125°F
Medium Rare: 130–135°F
Medium: 140–145°F
Rest: Remove the roast from the oven, cover loosely with foil, and let rest for 20–30 minutes. The temperature will continue to rise slightly while resting.
Serve: Slice against the grain and serve with pan juices or your favorite sides.
