Oven-Baked Herb Chicken Drumsticks with Roasted Vegetables

Preheat oven to 400°F (200°C).

In a large bowl, toss the chicken drumsticks with olive oil, minced garlic, paprika, thyme, oregano, lemon juice, salt, and pepper.

In a baking dish, mix the diced potatoes, carrots, bell pepper, and sweet potato with olive oil, garlic powder, salt, and pepper.

Place the seasoned chicken drumsticks on top of the vegetables.

Bake for 45–50 minutes, or until the chicken is golden and cooked through (internal temperature of 165°F / 74°C) and the vegetables are tender.

Garnish with freshly chopped parsley before serving.
