Mexican Barbecue Chicken Skewers

In a bowl, combine olive oil, lime juice, garlic, smoked paprika, cumin, chili powder, oregano, honey, salt, and pepper. Mix well.

Marinate the chicken:
Add chicken pieces to the marinade, ensuring all pieces are coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor.

Prepare the skewers:
Thread the marinated chicken onto skewers, leaving a little space between pieces for even cooking. Optionally alternate with slices of red onion or bell pepper.

Grill the skewers:
Preheat a grill or grill pan over medium-high heat. Cook skewers for 10–12 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges.

Serve:
Remove skewers from the grill and garnish with fresh cilantro and lime wedges. Serve hot with your choice of sides.
