Cook the Filling: In a skillet over medium heat, cook the ground meat with onions and bell pepper until browned. Drain excess fat. Stir in taco seasoning and black beans (if using). Remove from heat and let cool slightly.
Prepare the Dough: Roll out the puff pastry or pizza dough into rectangles or circles (about ¼ inch thick).
Assemble Pockets: Place 2–3 tablespoons of the taco filling onto each dough piece. Sprinkle cheese on top. Fold the dough over the filling and seal the edges with a fork.
Egg Wash: Beat the egg and brush it over the tops of the pockets for a golden finish.
Bake: Preheat the oven to 375°F (190°C). Bake the pockets for 15–20 minutes, or until golden brown and puffed.
Serve: Let cool slightly before serving with salsa, sour cream, or guacamole.
