Step 1 – Prepare the Oven and Pan
Preheat oven to 350°F (175°C).
Grease an 8″ round cake pan or line it with parchment paper.
Step 2 – Make the Cake Batter
In a mixing bowl, combine almond flour, erythritol, and baking powder.
Add eggs, almond milk, melted butter, vanilla extract, and lemon zest. Mix until smooth.
Gently fold in the blueberries.
Step 3 – Bake the Cake
Pour the batter into the prepared pan.
Bake for 30–35 minutes, or until golden and a toothpick inserted comes out clean.
Allow the cake to cool completely in the pan.
Step 4 – Prepare the Lemon Crème Topping
In a bowl, blend cream cheese, powdered erythritol, lemon juice, and heavy cream until smooth and creamy.
Spread the topping evenly over the cooled cake.
Step 5 – Chill and Serve
