Irresistible Potato and Pork Casserole: A Crowd-Pleasing Dinner

Preheat oven: Set oven to 375°F (190°C).

Prepare the vegetables: Heat olive oil in a large skillet over medium heat. Sauté onion and garlic until fragrant. Add carrots, mushrooms, and red bell pepper; cook for 5–6 minutes until slightly softened.

Cook the pork: Add ground pork to the skillet. Season with salt and pepper. Cook until browned and fully cooked through.

Assemble the casserole: Grease a baking dish. Layer half of the sliced potatoes at the bottom. Spread the cooked pork and vegetable mixture evenly on top. Layer the remaining potatoes over the pork mixture. Sprinkle shredded mozzarella cheese generously on top.

Bake: Cover with foil and bake for 25–30 minutes. Remove the foil and bake for an additional 10–15 minutes until the cheese is golden and the potatoes are tender.
