Prepare Chicken: Pat chicken legs dry. Season with salt, pepper, and your chosen spices.
Make the Glaze: In a small bowl, mix honey and soy sauce until smooth. Set aside.
Prepare Vegetables: Place chopped potatoes on a baking sheet. Drizzle with 1 tbsp vegetable oil and season with salt and pepper. Toss to coat evenly.
Roast Chicken and Vegetables:
Heat remaining 1 tbsp oil in a skillet over medium-high heat. Brown chicken legs on all sides for 4–5 minutes (optional, for extra flavor).
Place chicken legs on the baking sheet with potatoes. Brush generously with honey-soy glaze.
Roast in the preheated oven for 30–35 minutes, brushing with additional glaze halfway through, until chicken is fully cooked (internal temp 165°F / 74°C) and potatoes are tender.
Serve: Remove from oven, garnish with fresh herbs if desired, and serve hot.
