Homemade Starbucks-Style Egg Bites

Preheat Oven: Set oven to 350°F (175°C).

Blend Base: In a blender, combine eggs, cottage cheese, grated cheese, salt, and pepper. Blend until smooth and fluffy.

Prepare Mix-Ins: Dice peppers, chop chives, and crisp up bacon slices.

Combine: Fold the mix-ins into the blended egg mixture.

Prepare Cups: Spray silicone egg bite cups with avocado or cooking spray.

Fill Cups: Pour egg mixture into the prepared cups, filling about ¾ full.

Bake: Bake for 30 minutes, until egg bites are set and slightly golden.

Serve or Store: Let cool slightly, then remove from cups. Store in the fridge for up to 5 days, or freeze for later use.
