Prepare the crust: Preheat oven to 325°F (160°C). Mix almond flour, melted butter, and sweetener until crumbly. Press about 1 tbsp of the mixture into the bottom of each lined muffin cup. Bake for 5 minutes and set aside.
Make the filling: Blend cottage cheese until creamy. Add eggs, yogurt, sweetener, vanilla, and lemon juice. Blend until smooth.
Assemble: Spoon filling evenly into the muffin cups over the crust.
Bake: Bake for 18–22 minutes, until the centers are just set. Remove and cool completely.
Chill: Refrigerate at least 2 hours before serving. Add toppings if desired.
