Hearty Asparagus and Beef Omelet

Sauté the Vegetables and Beef:

In a medium skillet over medium heat, melt the butter.

Add asparagus, green bell pepper, and onion. Cook, stirring occasionally, until tender, about 5 minutes.

Stir in the diced beef sausage or ham and cook for an additional 2 minutes until heated through.

Prepare the Egg Mixture:

In a bowl, whisk together the eggs, salt, and black pepper until smooth.

Cook the Omelet:

Pour the egg mixture over the vegetable and beef mixture in the skillet.

Let it cook undisturbed for 2 minutes until the edges start to set. Gently lift edges with a spatula to allow uncooked eggs to flow underneath.

Add the Cheese:

Sprinkle the grated Provolone evenly over the omelet once the eggs are mostly set.

Fold and Serve:

Carefully fold the omelet in half and cook for another minute to melt the cheese thoroughly.

Slide onto a plate and serve warm.
