Scoop the avocados into a bowl and mash with a fork until creamy.
Mix in lime juice, tomato, onion, jalapeño, cilantro, salt, and pepper.
Taste and adjust seasoning. Set aside.
Step 2 – Assemble the Quesadillas:
Lay a tortilla flat.
Sprinkle 2–3 tbsp cheese on half of the tortilla.
Spread 2–3 tbsp guacamole over the cheese.
Add another light sprinkle of cheese to help seal the quesadilla.
Fold the tortilla in half to form a half-moon shape.
Repeat with remaining tortillas.
Step 3 – Cook Until Golden & Melty:
Heat a skillet over medium heat and add a little butter or oil.
Place quesadillas in the skillet and cook 2–3 minutes per side until golden brown and cheese is melted.
Transfer to a cutting board and let rest for 1 minute before slicing to prevent guacamole from spilling out.
