Step 1: Make the Dough
In a mixing bowl, combine flour and salt.
Gradually add warm water and mix until a soft dough forms.
Knead for 5–7 minutes until smooth and elastic. Cover with a damp cloth and let rest for 30 minutes.
Step 2: Prepare the Filling
In a small bowl, mix chopped green onions, salt, and oil.
Toast sesame seeds lightly if using.
Step 3: Assemble the Shao Bing
Divide dough into 4–6 equal portions.
Roll each portion into a thin circle.
Brush lightly with oil, sprinkle green onion mixture evenly, and fold or roll the dough as desired (classic method: fold in half and then roll again).
Flatten slightly with a rolling pin.
Step 4: Bake the Bread
Preheat oven to 375°F (190°C).
Place the prepared breads on a lined baking sheet.
Brush with beaten egg and sprinkle sesame seeds on top.
Bake for 20–25 minutes until golden brown and crispy on the edges.
