Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Add the potatoes, season with salt, pepper, and paprika, and cook for 12–15 minutes, stirring occasionally, until tender and golden. Remove from skillet and set aside.
Cook the Steak Bites:
Season steak cubes generously with salt and pepper.
In the same skillet, add 1 tablespoon olive oil and 1 tablespoon butter.
Add the steak bites in a single layer and sear for 2–3 minutes per side until browned and cooked to your liking. Remove and set aside.
Make the Garlic Butter Sauce:
Lower the heat slightly. Add the remaining butter to the skillet.
Stir in minced garlic, thyme, and rosemary, cooking for about 30 seconds until fragrant.
Combine:
Return potatoes and steak to the skillet, tossing to coat everything in the garlic butter sauce.
Garnish with chopped parsley before serving.
