Fresh Quinoa & Veggie Lettuce Wraps

Step 1 – Cook Quinoa

Prepare quinoa according to package instructions. Fluff with a fork and let it cool slightly.

Step 2 – Prepare the Veggies

Dice tomatoes, cucumber, and red onion. Chop parsley or cilantro.

Step 3 – Mix the Filling

In a medium bowl, combine the cooled quinoa, diced vegetables, corn, and herbs.

Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss gently to combine.

Step 4 – Assemble the Wraps

Spoon a generous amount of the quinoa mixture into the center of each lettuce leaf.

Step 5 – Serve

Arrange the filled lettuce leaves on a platter.

Garnish with lemon wedges and an optional sprinkle of cheese. Serve immediately.
