Fluffy Lemon Donuts

Preheat your oven to 180°C (350°F). Grease a donut pan lightly with oil or non-stick spray.

2. Mix Dry Ingredients

In a large bowl, combine the self-raising flour, sugar, and salt.

3. Combine Wet Ingredients

In another bowl, whisk together the buttermilk, canola oil, eggs, lemon juice, vanilla, and lemon zest.

4. Make the Batter

Pour the wet ingredients into the dry ingredients and gently fold together until just combined. Do not overmix; a few lumps are okay.

5. Fill the Donut Pan

Spoon the batter into the prepared donut pan, filling each cavity about ¾ full.

6. Bake

Bake in the preheated oven for 12–15 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and let cool slightly before removing from the pan.

7. Optional Lemon Glaze

Mix powdered sugar with 1–2 tablespoons lemon juice until smooth. Dip the tops of warm donuts into the glaze and allow to set.
