In a mixing bowl, combine cottage cheese, eggs, oats (or almond flour), baking powder, and any optional flavorings. Mix until smooth. A few small curds from the cottage cheese are fine.

Preheat a non-stick skillet or frying pan over medium heat. Lightly grease with a small amount of butter or oil.
Cook the Pancakes:
Pour small portions of batter (about ¼ cup each) onto the hot skillet. Cook for 2–3 minutes until bubbles form on the surface, then flip carefully and cook for another 1–2 minutes until golden brown.
Serve:
Stack the pancakes on a plate and serve warm. Top with fresh berries, a drizzle of honey, Greek yogurt, or nut butter for extra flavor and texture.
