Flatbread with Feta, Zucchini & Lemon-Garlic Yogurt

Prepare the Flatbread Base

Preheat oven to 400°F (200°C).

Place flatbreads on a baking sheet and brush with olive oil.

Arrange zucchini slices evenly over the top and season with salt and pepper.

Bake

Bake for 8–10 minutes, or until zucchini softens slightly and the flatbread edges turn golden.

Make the Lemon-Garlic Yogurt

In a bowl, combine Greek yogurt, garlic, lemon juice, lemon zest, and a pinch of salt. Mix well until smooth.

Assemble and Serve

Remove flatbreads from the oven.

Sprinkle with crumbled feta and drizzle generously with lemon-garlic yogurt.

Garnish with fresh dill or parsley.

Slice and serve warm.
