Prepare the Potatoes and Onion:
Peel the potatoes and onion. Grate them finely using a box grater or food processor.
Place the grated potatoes in a clean kitchen towel or cheesecloth and squeeze out excess moisture.
Mix the Batter:
In a large bowl, combine the grated potatoes and onion.
Add eggs, flour, cornstarch, baking powder, salt, and pepper. Mix until well combined.
Heat the Oil:
Pour about ¼ inch of oil into a large skillet and heat over medium-high heat until shimmering.
Fry the Fritters:
Scoop about ¼ cup of potato mixture for each fritter and flatten slightly in the skillet.
Fry for 3–4 minutes per side, until golden brown and crispy. Adjust heat as needed to prevent burning.
Transfer to a paper towel-lined plate to drain excess oil.
Serve:
Serve hot with applesauce, sour cream, or your favorite dipping sauce.
