Mix Ingredients: In a large bowl, combine grated zucchini, Parmesan, marjoram, paprika, salt, and pepper.
Coat Fritters: Form small patties with the zucchini mixture. Dredge each patty first in flour, then dip in beaten eggs, and finally coat with breadcrumbs.
Fry: Heat olive oil in a skillet over medium-high heat. Fry the zucchini patties until golden brown and crispy on both sides, about 2–3 minutes per side.
Drain & Serve: Remove from skillet and drain on paper towels. Serve hot.
