Grate the potatoes and squeeze out excess water using a clean kitchen towel.
Mix the Batter
In a bowl, combine grated potatoes, shredded cheese, chopped onion, egg, and flour.
Season with salt and pepper. Mix until well combined.
Heat the Oil
Pour enough oil into a skillet to cover the bottom. Heat over medium heat.
Fry the Fritters
Scoop small portions of the mixture and flatten slightly into patties.
Fry for 3–4 minutes per side or until golden brown and crispy.
