In a large skillet over medium heat, melt butter or heat olive oil.
Season chicken pieces with salt and pepper.
Cook until lightly browned and cooked through, about 5–7 minutes. Remove and set aside.
Sauté Aromatics:
In the same skillet, add onion and garlic. Sauté until soft and fragrant, about 2–3 minutes.
Add Liquids and Noodles:
Pour in chicken broth and milk (or cream). Stir in thyme or Italian seasoning.
Bring to a simmer, then add egg noodles. Stir to combine.
Simmer Until Creamy:
Reduce heat to low and cover. Cook for 8–10 minutes, stirring occasionally, until noodles are tender and most of the liquid is absorbed.
Finish the Dish:
Return the cooked chicken to the skillet. Stir in Parmesan cheese if using.
Cook for another 2–3 minutes until heated through.
Serve:
Garnish with fresh parsley and extra Parmesan if desired. Serve hot.
