Creamy Bell Pepper Meatballs

Make the Meatballs: In a large bowl, mix ground beef, egg, breadcrumbs, garlic, salt, and pepper. Form into 1-inch meatballs.

Brown the Meatballs: Heat olive oil in a skillet over medium heat. Brown the meatballs on all sides, about 5–7 minutes. Remove and set aside.

Sauté Peppers & Build Sauce: In the same skillet, add sliced bell peppers. Cook for 3–4 minutes until softened. Stir in heavy cream, beef broth, and smoked paprika. Simmer for 2 minutes.

Combine & Finish: Return the browned meatballs to the skillet and simmer in the sauce for 5–7 minutes until cooked through.

Serve: Garnish with fresh parsley and serve over pasta, rice, or mashed potatoes.
