Colorful and Comforting Layered Vegetable Bake

Preheat your oven to 375°F (190°C).

Sauté Aromatics:

Heat olive oil in a skillet over medium heat.

Add onion and garlic, sauté until softened and fragrant.

Layer the Vegetables:

In a greased baking dish, spread a thin layer of tomato sauce.

Arrange zucchini, yellow squash, carrots, and bell pepper in overlapping layers.

Sprinkle with a pinch of oregano, basil, salt, and pepper.

Repeat the layers until all vegetables are used, finishing with a layer of sauce on top.

Add Cheese:

Sprinkle shredded mozzarella and Parmesan on top for a golden, bubbly finish.

Bake:

Cover with foil and bake for 25 minutes.

Remove foil and bake for an additional 15–20 minutes, until vegetables are tender and cheese is melted and slightly golden.

Serve:

Let the bake rest for 5 minutes before serving.

Garnish with fresh parsley for a pop of color and flavor.
