Cheesy Zucchini & Ground Meat Bake

Preheat the oven to 180°C (350°F).

Slice zucchini, onion, bell pepper, and tomato. Set aside.

In a skillet, heat vegetable oil and sauté onion, garlic, and bell pepper until softened. Add ground meat and cook until browned. Season with salt, pepper, smoked paprika, and Provençal herbs. Remove from heat.

In a bowl, whisk eggs and combine with breadcrumbs and grated cheese. Mix into the cooked meat and vegetables.

Layer the zucchini slices in a greased baking dish. Spread the meat and vegetable mixture evenly on top. Place tomato slices over the top. Dot with butter.

Bake for 25–30 minutes, or until zucchini is tender and the top is golden.

While baking, mix sour cream, mayonnaise, garlic, and dill in a small bowl to make the sauce.

Serve the zucchini bake warm with the dill-garlic sauce on the side or drizzled on top.
