Bring a pot of salted water to a boil.
Cook noodles according to package directions until al dente.
Drain, rinse with cold water, and set aside.
2. Prepare the Sauce
In a small bowl, whisk together soy sauce, oyster sauce, cornstarch, sesame oil, and beef broth.
Set aside.
3. Cook the Beef
Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat.
Season the beef lightly with salt and pepper.
Sear the beef slices for 2–3 minutes until browned but not overcooked.
Remove from the pan and set aside.
4. Cook the Vegetables
In the same pan, add the remaining tablespoon of vegetable oil.
Sauté garlic for 30 seconds until fragrant.
Add broccoli and carrots, stir-frying for 3–4 minutes until tender-crisp.
5. Combine Everything
Return the beef to the skillet.
Pour in the sauce and stir until it thickens slightly.
Add noodles, tossing everything together until evenly coated.
6. Serve
Garnish with sesame seeds or sliced green onions if desired.
