Baked Chicken Drumsticks with Buckwheat and Vegetables

Preheat oven to 200°C (390°F).

Rub drumsticks with olive oil, paprika, garlic powder, salt, and pepper.

Place on a baking sheet or ovenproof dish.

Prepare the Buckwheat:

Rinse buckwheat groats under cold water.

In a separate pan, heat olive oil and sauté onion, carrot, zucchini, and bell pepper for 3–4 minutes.

Add buckwheat, stir, and pour in water or broth. Season with salt and pepper.

Bake Together:

Place the chicken drumsticks on top of or next to the buckwheat and vegetables in the baking dish.

Cover with foil and bake for 35–40 minutes, removing foil in the last 10 minutes to brown the chicken.

Serve:

Remove from oven, sprinkle with fresh herbs if desired, and serve warm.
