Tender Pot Roast over Creamy Mashed Potatoes

A melt-in-your-mouth chuck roast slow-cooked with veggies, served over rich and buttery mashed potatoes — pure comfort food heaven!

Ingredients

For the Pot Roast:

3–4 lb chuck roast

1 tbsp olive oil

Salt & black pepper, to taste

1 large onion, sliced

4 cloves garlic, minced

2 cups beef broth

1 tbsp Worcestershire sauce

1 tbsp tomato paste

1 tsp dried thyme

½ tsp rosemary

3 cups baby carrots (or sliced large carrots)

2 celery stalks, sliced (optional)

For the Mashed Potatoes:

2 lbs russet potatoes, peeled & chopped

½ cup butter

½ cup milk or heavy cream

Salt, to taste
