Tender Pot Roast over Creamy Mashed Potatoes

Season the roast with salt & pepper. Heat olive oil in a pot and sear on all sides until golden brown.

Build the Flavor Base
Add onions and garlic. Stir in tomato paste, thyme, and Worcestershire sauce. Pour in beef broth, scraping the bottom of the pot to deglaze.

Slow Cook the Roast
Add carrots and celery. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours until the roast is fork-tender.
