Ingredients (Serves 2–3)

1 cup cherry or grape tomatoes, halved

1 cup artichoke hearts, drained and chopped

1/2 cup string cheese, chopped (or reduced-fat feta for a Greek twist)

1/4 cup sliced ripe olives (or Kalamata olives for Greek flair)

1–2 tsp olive oil

1 tsp balsamic vinegar or lemon juice

Salt & pepper, to taste

Optional protein additions:

1/2 cup cooked shredded rotisserie chicken

1/2 cup canned tuna, drained

1/2 cup cooked Italian-style chicken sausage, chopped
