Quinoa Filling
1 cup cooked quinoa (follow package directions)
1 cup diced tomatoes
½ cup diced cucumber
¼ cup finely diced red onion
¼ cup corn (fresh, frozen & thawed, or canned)
2 tbsp chopped fresh parsley or cilantro
1 tbsp olive oil
1 tbsp lemon juice
Salt and black pepper, to taste
For Serving
1 head of crisp lettuce (butter, romaine, or iceberg), leaves separated and washed
Lemon wedges for garnish
Optional: crumbled feta or Parmesan cheese
