Spiced Salmon with Cheesy Asparagus & Garlic Herb Potatoes

Preheat Oven: Preheat the oven to 400°F (200°C).

Prepare the Salmon:

Pat salmon fillets dry.

Rub with olive oil, paprika, garlic powder, salt, pepper, and lemon juice.

Place on a parchment-lined baking sheet.

Prepare the Asparagus:

Toss asparagus with olive oil, garlic powder, salt, and pepper.

Arrange next to the salmon and sprinkle mozzarella on top.

Prepare the Potatoes:

In a bowl, toss halved baby potatoes with melted butter, minced garlic, salt, and pepper.

Spread in a single layer on a separate baking sheet.

Roast:

Bake salmon and asparagus for 15–18 minutes, until salmon flakes easily and cheese is melted and slightly golden.

Bake potatoes for 25–30 minutes, flipping halfway, until golden and crispy.

Serve:

Plate the salmon with cheesy asparagus and garlic herb potatoes.

Garnish potatoes with fresh parsley and serve immediately.

For extra flavor, squeeze fresh lemon over the salmon just before serving.

You can roast the potatoes alongside salmon if your baking sheet is large enough, just keep an eye on cooking times.

Swap mozzarella for Parmesan for a sharper cheesy flavor.
