In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
Prepare Slow Cooker:
Transfer the cooked beef to your slow cooker. Add tomato juice, tomato purée, onion, bell pepper, garlic, chili powder, cumin, smoked paprika, salt, and pepper.
Add Beans:
Stir in kidney beans and black beans.
Cook:
Cover and cook on low for 6–8 hours or high for 3–4 hours. Stir occasionally if possible.
Serve:
Spoon chili into bowls and top with shredded cheese, sour cream, or chopped green onions if desired.
Tips:
For extra depth, add a splash of Worcestershire sauce or a pinch of cocoa powder.
