Pickled Beets

Place the beets in a large saucepan and cover with water. Cook over medium-high heat for about 35 minutes, or until beets are completely softened.

Peel the Beets:
Remove the beets from the water and let them cool. Wearing rubber gloves, peel the skins off—they should come off easily.

Slice or Cube:
Cut the peeled beets into small cubes or rings, depending on your preference.

Prepare the Jars:
Place the beets in glass jars with secure lids. Add a few sprigs of fresh dill to each jar if using.

Make the Pickling Liquid:
In a large jug, mix together apple cider vinegar, honey, salt, pepper, and warm water.

Combine & Seal:
Pour the pickling liquid over the beets in the jars until fully covered. Seal the jars tightly.

Chill & Serve:
Refrigerate for at least 24 hours before eating to allow flavors to develop.
