Preheat the Oven
Preheat your oven to 425°F (220°C).
Prepare the Chicken
Pat the chicken dry with paper towels. Rub it all over with 2 tablespoons of olive oil, minced garlic, rosemary, thyme, salt, and pepper.
Prepare the Potatoes
In a large bowl, toss the halved or quartered baby potatoes with the remaining 2 tablespoons of olive oil, a pinch of salt, pepper, and a sprinkle of extra herbs if desired.
Assemble in the Roasting Pan
Place the seasoned chicken in the center of a large roasting pan. Arrange the potatoes around the chicken.
